Coconut Pie
6 eggs
2 cups of sugar
1 cup of flour
1 large can of evaporated milk
1 large can of regular milk.
1 stick of blue bonnet margarine
7 oz of bakers coconut
2 shallow pie crust
Separate eggs whites from yolks….SAVE BOTH
With a fork poke holes in pie crust…then bake until golden brown.
In 4 quart pot mix egg yolks, milk, and sugar then mix in flour. Cook on medium heat until thick. Add butter and coconut. Mix well pour into already baked crust. Top with Meringue. Sprinkle with coconut and bake until brown.

In a clean glass bowl beat egg whites until stiff add ½ cup of powder sugar
