Gumbo
1 and ½ cups chopped green onions.
1 cup of chopped celery
1 pound sliced okra
2 pound sliced smoked sausage
1 chicken
½ TSP thyme
2 TBL gumbo file
1 package Cajun Brown Gravy Mix (if can not find use 2 packages brown gravy mix)
Boil and de-bone chicken. Add water to broth to make one gallon. Add onions and celery. Add Thyme. Mix Gumbo file with water before you add to your gumbo. Add Sausage and boil 30 minutes. Add Okra and boil 25 minutes. Mix Gravy Mix with 1 cup cold water and add to gumbo. Cook 10 minutes.
Serve with Rice.
Altie likes to cook 2 cups of rice and add to gumbo and cook for 10 minutes.
